CONCENTRATED MILK.
The buildings, land, and plant of the Melbourne Mi k Supply Company, at Romany, have been purchased by a local firm, Messrs J tekman and Derrick, who are carrying on all the business of a dairy. They have a specialty which they call ” milk, and which U supplied to the public for use in lieu of that ordlnariy need. “ Condensed ” milk is*well-known, bat the two processes are altogether distinct. The secret of' the new business lies in evaporating all the Water from the milk. It is thus reduced to about | of its orignai balk, and in order to restore it, it is only necessary to add water. Any difference between new milk and the concentrated article Is ex* tremely' difficult to tell, Tho manipulation during the process of preservation fa rath c singular. After undergoing a preliminary preparation, the milk enters a large vacuum boiler, where all watery matter is evaporated by the action of twe air pumps, the motive power being supplied by a4B horse power engine. It la then rapidly cooled. It is claimed that it is particularly wholesome, being parified by the process It goes through. It is especially useful ss, in itp concentrated form, it will keep for at least a fortnight. The very best quality is guaranteed, as It is produced on c uatry farms in tho districts of Bomsey and Lancefield. As it does not turn sour, it is of great advantage to hotels, or for nse on board ship it has been tried at the public institutions in Melbonroe, and reported favorably upon, and it should certainly soon come into general nse. Can nothing of this kind be done around the centres of New Zealand.
