Report on the analysis of a sample of bread received from Mr. A. Thiele, Ashburton, Sept. 23, 1880 ; L.N. 539 Physical characteristics, a well-made bread, clean and white, and of good taste; water, 43.0-1 per cent; ash, '9O per cent ; alum, nil ; sulphuric acid, trace ; copper, nil; iron, nil ; tartaric acid, nil; reaction of aqueous infusion, slightly acid; reaction of ash, alkaline; color of ash, white. The above analysis proves this sample of bread to be well-made, of good quality, and free from adulteration. A. W. Bickerton, Colonial Analyst.
