N. 539 Physical characteristics, a well-made bread, clean and white, and of good taste; water, 43.01 per cent; ash, -90 per cent ; alum, nil ; sulphuric acid, trace ; copper, nil; iron, nil ; tartaric acid, nil; reaction of aqueous infusion, slightly acid; reaction of ash, alkaline ; color of ash, white. The above analysis proves this sample of bread to be well-made, of good quality, and free from adulteration.
