SOME GOOD RECIPES Remember, when pickling, never to use a tin or copper saucepan, and always cover the corks with melted sealing wax to make them airtight. Pickled Damsons. Wash, dry and prick with a needle 31b damsons. Put them into a bowl, pour over a pint of vinegar, and leave for 24 hours. Strain, and boil the vinegar with 41b loaf Sugar, a stick of cinnamon, 3 blades of mace, and half a teaspoonul allspice, and pour again on to the damsons. Leave for 12 hours, then boil all fast for three minutes before turning into clean jars. Marrow Chutney Peel and remove the seeds from a vegetable marrow. Weigh, and to 21b of the vegetables allow £lb shallots, onions, 41b brown sugar, i teaspoonful cayenne, £oz ground ginger, loz salt and f pint vinegar. Cut the marrow into small pieces , and put them with the peeled and minced onions and shallots on a large flat dish, and sprinkle the salt over them. Leave for 12 hours. The (next day put. the vegetables with the other ingredients and the juice formed by the salt and marrow into a pan and bring to the boil. Simmer gently for two hours, stirring often, especially as the mixture thickens. Put into jars and cork; then cover with waxed paper. Green Tomato Pickle To 51b green tomatoes allow Jib of moist sugar, 1 quart of vinegar, 1 teaspoonful of small dried chillies, and £oz each of peppercorns, mustard seeds, cloves and vinegar; salt. Wipe the tomatoes, remove the stalks and cut the fruit into slices, put these into a basin in layers, with salt sprinkled between each layer; cover with muslin and leave for 12 hours. Drain off the salt water and put the tomatoes into a enamel pan with the other ingredients. The ginger should be well bruised before adding it. Pour the vinegar over, bring to the boil and simmer slowly until the tomatoes are soft. When cold put into bottles and cork securely. Apple and Tomato Chutney. Ingredients: One quart sliced applies lib tomatoes (skinned and chopped up), 41b brown sugar, lib raisins (stonned and chopped), 2oz onions (chopped), $ teaspoonfuL cayenne pepper, 1 pint vinegar, and a dessertspoonful of salt. Boil tho apple and tomato together until tender, then add the other ingredients and boil for 20 minutes.
